Authentic Delicious Chicken Biryani

Chicken Biryani recipe is a popular and flavorful dish originating from the Indian subcontinent, known for its rich blend of spices, tender meat, and fragrant basmati rice. It’s a layered rice dish where marinated chicken is cooked with a mix of spices like coriander, cardamom, and cinnamon, often combined with saffron to give the rice a golden hue and delicate aroma.

The Chicken Biryani recipeis traditionally prepared using the “dum” cooking technique, where the pot is sealed and slow-cooked, allowing the flavors to fully infuse. The result is a balanced medley of juicy chicken, aromatic rice, and spices, often garnished with fried onions, fresh mint.

Ingredients

For Barista

  • 3 Onion medium size, sliced
  • Oil for frying,

For Chicken Marination

  • ⅓ cup Fried onions,
  • 1 cup Curd,
  •  ½ tbsp Tender Coriander stems, finely chopped,
  • few Mint leaves, roughly torn,
  • 2 Green chillies, less spicy & broken into half,
  • 1 ½ tbsp Ginger Garlic paste,
  • 2-3 tbsp Fried Onion Oil,
  • Salt to taste,
  • 1 tsp Coriander powder, धनिया पाउडर
  • ½ tsp Degi red chilli powder, देगी लाल मिर्च पाउडर
  • ¼ tsp Turmeric powder, हल्दी पाउडर
  • 700 gms Chicken (thigh, drumstick) चिकन
  • 1 tbsp Fried Onion Oil, तले हुए प्याज का तेल

For Cooking Rice

  • Water as required,पानी
  • Salt to taste, नमक स्वादअनुसार
  • 1 tsp Ghee, घी
  • ½ inch Cinnamon stick,
  • 1 Bay leaf,
  • 3 cups Sella basmati rice (soaked for 20 minutes)

For Jhol

  • ⅓ cup Milk,
  • 1 ½ tsp Saffron water,
  • ¼ tsp Green cardamom & mace powder,
  • little bit shahi jeera,
  • 1 Green chilli, less spicy & slit,
  • few Mint leaves, roughly torn,
  • 2 tbsp Coriander leaves, roughly torn,
  • Salt to taste,
  • ½ tsp Sugar,

Instructions

Process For Fried Onion

  • Take 3 medium size onion.
  • cut them into slices.
  • sprinkle some salt.
  • Take a pan or kadai add some oil and heat up.
  • Once it is enough hot put onions into it.
  • Fry them until light golden-brown color popup.
  • While frying onions stir them 4-5 times.

Note: – If you fry the onions until they become full brown, they will turn black once you remove them form frying pan. The best thing you can do is fry onions until light brown color appears.

 

For Marination

  • In the same bowl onion was fried, add curd, ginger garlic paste, mint leaves, fried onion oil, tender coriander stems, green chili and mix them gently.
  • Now add salt, red chili powder, coriander powder, turmeric powder and mix everything well.
  • Pour this mixture into chicken and cover it very well.
  • After this process add fried onion oil accordingly.
  • Mix everything and our marinated chicken is ready.

For Cooking Rice

  • Take a handi add some water and boil it.
  • Once it is start boiling add some salt to taste, bay leaf, cinnamon stick, ghee and lastly add basmati rice.
  • Now cover the lid and cook the rice for 4-5 minutes on high flame.
  • We will make batches of these rice. First batch will be nearer the chicken and it will be more cooked.
  • The second batch will be on top, it will be little bit less cooked as shown in the image below.
  • Now take out 60% cooked rice and place it into a tray and let the rice rest for few minutes.
  • Take out remaining cooked rice and place it into another tray.
  • Keep these trays aside to use them later.

For Layering Everything

  • Take a handi, add marinated chicken after that add the first batch of rice which was less cooked and layer it evenly.
  • Add Jhol which was prepared earlier, add saffron water and fried onion.
  • Now add the second batch of rice and gently layer it.
  • Add saffron water, Jhol, ghee and fried onion. Our layer is ready to be cooked.
  • Take the tawa and heat it, now place the handi on the tawa, close the lid and cook for it 2-3 minutes on high flame.
  • Slow down the flame and cook for another 15-20 minutes.
  • Once everything get cooked well keep it aside and allow it to cool down for 10 minutes.
  • Final step garnish it with coriander.
  • Congrats our Chicken biryani is ready for serve.
